Pumpkin Surprise

Ingredients:
  1 cup firmly packed brown sugar.
  2 tablespoons Karo syrup
  1 cube butter
  6 eggs
  1 1/2 cup milk
  2 teaspoons vanilla
  1/2 package of cream cheese
  1/2 cup pumpkin pie mix
  About 12 slices trimmed white bread
  Flat pyrex pan large enough to hold 6 slices of bread. Grease the sides of the pan.

Melt the butter on low heat. Increase the heat and add the brown sugar and Karo syrup. Stir constantly until the mixture starts to thicken. Pour evenly into a flat pan.

Mix the eggs, milk and vanilla together in a bowl. Lay out a layer of bread in the pan, making sure that there are no gaps in the bread layer. Pour 1/2 of the egg mixture over it.

Combine the cream cheese and the pumpkin pie mix and warm in a microwave so that it mixes thoroughly. Pour the mixture into the pan and spread evenly.

Add another layer of bread, again avoiding gaps. Fill the pan with the remaining egg mixture. Be sure that the bread is completely covered. Mix more eggs, vanilla and milk if necessary.

(The pan with the prepared ingredients can be refrigerated overnight covered in plastic wrap and baked in the morning for breakfast.)

Cook for 40 minutes in a 350 degree oven. Loosen the edges and invert onto a cookie sheet to cool. Refrigerate and serve with whipped cream.
